Ingredients
- Cooked short-grain rice - 200 grams
- Eggs - 2 large
- Spinach - 100 grams
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Mushrooms (shiitake or button) - 100 grams, sliced
- Ground chicken or turkey - 150 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Gochujang (Korean chili paste) - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - to taste
- Pepper - to taste
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat 1 tablespoon of sesame oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the ground chicken or turkey to the skillet and cook until browned. Season with soy sauce, salt, and pepper. Remove from heat.
- In the same skillet, add the sliced mushrooms and cook until soft. Add the julienned carrots and zucchini, and sauté until tender. Finally, add the spinach and cook until wilted. Remove from heat.
- In a large oven-safe dish, spread the cooked rice evenly as the base.
- Layer the cooked vegetables and ground meat mixture over the rice, distributing evenly.
- Make two small wells in the vegetable mixture and crack an egg into each well.
- Drizzle gochujang over the top and sprinkle with sesame seeds.
- Bake in the preheated oven for 10-12 minutes, or until the eggs are set to your liking.
- Remove from the oven, garnish with chopped green onions, and serve hot.
