Ingredients

  • Napa cabbage - 300 grams
  • Korean radish (mu) - 100 grams
  • Carrot - 50 grams
  • Garlic - 4 cloves
  • Ginger - 10 grams
  • Salt - 20 grams
  • Sugar - 1 tablespoon (15 grams)
  • Water - 500 milliliters
  • Green onions - 2 stalks
  • Sesame seeds - 1 tablespoon

Steps

  1. Cut the napa cabbage in half lengthwise and then into quarters. Dissolve 20 grams of salt in 500 milliliters of water and soak the cabbage pieces in the saltwater for about 2 hours, turning occasionally.
  2. While the cabbage is soaking, julienne the Korean radish and carrot. Set aside.
  3. In a blender, combine the garlic, ginger, sugar, and a little water (about 50 milliliters) to make a smooth paste.
  4. After 2 hours, rinse the cabbage thoroughly under cold water to remove excess salt. Drain well and squeeze out any remaining water.
  5. In a mixing bowl, combine the drained cabbage, radish, carrot, and the garlic-ginger paste. Mix thoroughly until all vegetables are well coated.
  6. Chop the green onions and add them to the mixture. Stir to combine evenly.
  7. Transfer the mixture into a clean glass jar, pressing down to remove air pockets. Leave some space at the top as the kimchi may expand during fermentation.
  8. Seal the jar and let it ferment at room temperature for 1-2 days depending on your preferred tanginess. Once fermented, store it in the refrigerator.
  9. Before serving, sprinkle sesame seeds on top for added flavor and garnish.
