Ingredients

  • Napa cabbage - 200 grams, roughly chopped
  • Water - 600 ml
  • Vegetable broth - 200 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Tofu - 150 grams, cubed
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Red pepper flakes - 1 teaspoon (adjust to taste)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, combine the water and vegetable broth, then bring to a boil over medium heat.
  2. Add the minced garlic, grated ginger, and soy sauce to the pot, stirring well.
  3. Once the broth is boiling, reduce the heat to low and add the chopped napa cabbage and sliced mushrooms.
  4. Simmer for about 10 minutes, until the cabbage is tender.
  5. Gently add the cubed tofu to the soup and let it heat through for an additional 5 minutes.
  6. Stir in the sesame oil, red pepper flakes, and season with salt and black pepper to taste.
  7. Remove from heat and garnish with chopped green onions before serving.
