  • All-purpose flour - 1/2 cup
  • Cornstarch - 1/4 cup
  • Baking powder - 1/2 tsp
  • Cold water - 3/4 cup
  • Salt - 1/4 tsp
  • Vegetable oil - for frying
  • Pizza dough - 1 pre-made round (about 250g)
  • Tomato sauce - 1/2 cup
  • Mozzarella cheese - 100g, shredded
  • Parmesan cheese - 30g, grated
  • Basil leaves - a handful, fresh
  • Black pepper - to taste

Steps

  1. Prepare the zucchini by slicing it into thin rounds (about 0.5 cm thick).
  2. In a bowl, mix the all-purpose flour, cornstarch, baking powder, salt, and cold water until you achieve a smooth batter.
  3. Heat vegetable oil in a deep skillet or pot over medium-high heat for frying.
  4. Dip each zucchini slice into the batter and carefully place it in the hot oil, frying in batches until golden brown and crispy (about 2-3 minutes). Remove and drain on paper towels.
  5. Preheat your oven to 220°C (425°F).
  6. Roll out the pizza dough on a floured surface to fit your pizza stone or baking sheet.
  7. Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
  8. Sprinkle shredded mozzarella cheese and grated Parmesan cheese on top of the sauce.
  9. Arrange the fried zucchini tempura over the cheese layer, and season with black pepper.
  10. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  11. Remove from the oven, top with fresh basil leaves, slice, and serve immediately.
