Ingredients

  • Sesame oil - 1 tablespoon (15ml)
  • Rice vinegar - 1 tablespoon (15ml)
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon (9g)
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Cilantro - a handful, chopped (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create thin noodle-like strands.
  2. Heat a non-stick skillet over medium heat and add the sesame oil.
  3. Sauté the minced garlic and grated ginger in the skillet for about 1 minute until fragrant.
  4. Add the spiralized zucchini to the skillet and stir-fry for 2-3 minutes until slightly softened but still crisp.
  5. In a small bowl, combine the soy sauce, rice vinegar, and red pepper flakes (if using).
