- Shiitake mushrooms - 100 grams, sliced

Steps
- Using a spiralizer or a vegetable peeler, create zucchini noodles from the zucchini and set aside.
- In a large skillet, heat the sesame oil over medium heat, then add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced shiitake mushrooms to the skillet and cook for 3-4 minutes until softened.
- Stir in the halved cherry tomatoes and cook for an additional 2 minutes until they start to soften.
