Ingredients

  • Zucchini - 2 medium (about 400g)
  • Ground turkey or chicken - 200g
  • Mushrooms - 100g, finely chopped
  • Bell pepper - 1 medium, chopped
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato sauce - 200ml (preferably no added sugar)
  • Olive oil - 1 tablespoon
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for cheesy flavor)
  • Fresh basil - for garnish (optional)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Using a spiralizer, create zucchini noodles from the two medium zucchinis and set aside.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
  4. Add ground turkey (or chicken) to the skillet, cooking until browned and fully cooked, about 5-7 minutes.
  5. Stir in chopped mushrooms and bell pepper, cooking for an additional 5 minutes until the vegetables are tender.
  6. Pour in the tomato sauce, adding Italian seasoning, salt, and black pepper. Simmer for 5 minutes to blend the flavors.
  7. In a baking dish, layer the zucchini noodles, then pour the meat and vegetable mixture over them, spreading evenly.
  8. If using, sprinkle nutritional yeast over the top for a cheesy flavor.
  9. Bake in the preheated oven for 20-25 minutes until heated through and slightly golden on top.
  10. Remove from the oven, let cool for a few minutes, then garnish with fresh basil before serving.
