Ingredients

  • Zucchini - 2 medium (about 300g)
  • Dashi stock - 200 ml
  • Soy sauce - 2 tablespoons (30 ml)
  • Mirin - 1 tablespoon (15 ml)
  • Sugar - 1 teaspoon (4 g)
  • Sesame oil - 1 teaspoon (5 ml)
  • Green onion - 1 stalk, chopped (for garnish)
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Wash the zucchini thoroughly and slice them into 1 cm thick half-moons.
  2. In a medium saucepan, combine the dashi stock, soy sauce, mirin, and sugar, and bring to a gentle simmer over medium heat.
  3. Add the sliced zucchini to the saucepan and cover. Allow it to simmer for about 15 minutes, or until the zucchini is tender but not mushy.
  4. Once the zucchini is cooked, remove the lid and let the broth reduce slightly for about 5 minutes to intensify the flavors.
  5. Remove from heat and drizzle with sesame oil, stirring gently to combine.
  6. Serve warm, garnished with chopped green onions and sesame seeds.
