Ingredients

  • Zucchini - 2 medium (approximately 300g)
  • Carrot - 1 small (approximately 50g)
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash and slice the zucchini into thin half-moons.
  2. Peel and julienne the carrot into thin strips.
  3. Heat sesame oil in a non-stick skillet over medium heat.
  4. Add minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.
  5. Add the sliced zucchini and julienned carrot, stirring frequently for about 5-7 minutes until they become tender but still crisp.
  6. Pour in the soy sauce, and season with salt and black pepper to taste, cooking for an additional 2 minutes.
  7. Remove from heat and stir in chopped green onions.
  8. If desired, sprinkle sesame seeds on top before serving.
