- Zucchini - 2 medium (approximately 300g)
- Carrot - 1 small (approximately 50g)
- Soy sauce - 1 tablespoon (15ml)
- Sesame oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Sesame seeds - 1 tablespoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- Wash and slice the zucchini into thin half-moons.
- Peel and julienne the carrot into thin strips.
- Heat sesame oil in a non-stick skillet over medium heat.
- Add minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.
- Add the sliced zucchini and julienned carrot, stirring frequently for about 5-7 minutes until they become tender but still crisp.
- Pour in the soy sauce, and season with salt and black pepper to taste, cooking for an additional 2 minutes.
- Remove from heat and stir in chopped green onions.
- If desired, sprinkle sesame seeds on top before serving.
