Steps
- Wash the zucchini and slice it into thin half-moons.
- Clean the shiitake mushrooms and slice them thinly.
- In a large skillet or wok, heat the sesame oil over medium heat.
- Add the minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.
- Add the sliced zucchini and shiitake mushrooms to the skillet, stirring well to coat them with the oil.
- Cook for about 5-7 minutes, or until the zucchini is tender but still slightly crisp.
- Pour in the soy sauce and stir to combine, cooking for an additional 2 minutes.
- Season with salt and black pepper to taste.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
