Ingredients

  • Zucchini - 300 grams
  • Shiitake mushrooms - 100 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon

Steps

  1. Wash the zucchini and slice it into thin half-moons.
  2. Clean the shiitake mushrooms and slice them thinly.
  3. In a large skillet or wok, heat the sesame oil over medium heat.
  4. Add the minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.
  5. Add the sliced zucchini and shiitake mushrooms to the skillet, stirring well to coat them with the oil.
  6. Cook for about 5-7 minutes, or until the zucchini is tender but still slightly crisp.
  7. Pour in the soy sauce and stir to combine, cooking for an additional 2 minutes.
  8. Season with salt and black pepper to taste.
  9. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
