- Zucchini - 2 medium (about 300g)
- Shiitake mushrooms - 150g, sliced
- Soy sauce (or tamari for gluten-free) - 4 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Egg - 2 large
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create zucchini noodles.
- In a large skillet, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced shiitake mushrooms to the skillet and cook for about 5 minutes until they are tender.
- Pour in the soy sauce and stir well to coat the mushrooms evenly. Cook for another 2-3 minutes.
- In a separate pan, fry the eggs sunny-side up or to your preference.
- Add the zucchini noodles to the skillet with the mushrooms, cooking for an additional 3-4 minutes until the zucchini is just tender. Season with salt and pepper to taste.
- To serve, divide the zucchini and mushroom mixture into two bowls, top each with a fried egg, and garnish with chopped green onions and sesame seeds.
