- Carrot - 1 small, finely diced (about 50g)
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Sesame seeds - 1 tablespoon (optional)
Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create zucchini noodles.
- In a large frying pan or wok, heat the olive oil over medium heat.
- Add minced garlic and diced carrot to the pan, sautéing for about 2-3 minutes until softened.
- Add the spiralized zucchini to the pan and stir-fry for another 3-4 minutes until slightly tender.
- Push the zucchini mixture to one side of the pan, crack the eggs into the empty side, and scramble them until fully cooked.
- Mix the scrambled eggs with the zucchini and carrot mixture, then add soy sauce, sesame oil, salt, and black pepper.
- Stir everything together for another 2 minutes, allowing the flavors to meld.
- Garnish with chopped green onion and sesame seeds before serving.
