Ingredients

  • Short-grain rice - 100g
  • Dashi stock - 600ml
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Green onions - 2 stalks, finely chopped
  • Carrot - 1 small, thinly sliced
  • Shiitake mushrooms - 3, sliced
  • Egg - 1, beaten
  • Salt - to taste
  • Nori seaweed - 1 sheet, cut into strips (for garnish)
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and dashi stock. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low and simmer for about 15 minutes, stirring occasionally until the rice is soft and the mixture is creamy.
  4. Add the soy sauce, mirin, sliced carrots, and shiitake mushrooms to the pot. Stir and cook for another 5 minutes.
  5. Slowly drizzle in the beaten egg while stirring gently to create ribbons in the porridge. Cook for an additional 2-3 minutes until the egg is fully cooked.
  6. Season with salt to taste and remove from heat.
  7. Serve hot, garnished with chopped green onions, nori strips, and a sprinkle of sesame seeds.
