Ingredients
- Short-grain rice - 100g
- Dashi stock - 600ml
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Green onions - 2 stalks, finely chopped
- Carrot - 1 small, thinly sliced
- Shiitake mushrooms - 3, sliced
- Egg - 1, beaten
- Salt - to taste
- Nori seaweed - 1 sheet, cut into strips (for garnish)
- Sesame seeds - 1 teaspoon (for garnish)
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then drain.
- In a pot, combine the rinsed rice and dashi stock. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer for about 15 minutes, stirring occasionally until the rice is soft and the mixture is creamy.
- Add the soy sauce, mirin, sliced carrots, and shiitake mushrooms to the pot. Stir and cook for another 5 minutes.
- Slowly drizzle in the beaten egg while stirring gently to create ribbons in the porridge. Cook for an additional 2-3 minutes until the egg is fully cooked.
- Season with salt to taste and remove from heat.
- Serve hot, garnished with chopped green onions, nori strips, and a sprinkle of sesame seeds.
