Ingredients

  • Green onions - 2, chopped
  • Spinach - 50 grams, roughly chopped
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Salt - to taste
  • Eggs - 2, beaten

Steps

  1. In a pot, bring the dashi stock to a simmer over medium heat.
  2. Add the sliced shiitake mushrooms and diced carrot to the pot, cooking for about 5 minutes until softened.
  3. Stir in the cooked white rice, spinach, soy sauce, and mirin, mixing well.
  4. Allow the mixture to simmer for another 10 minutes, stirring occasionally.
  5. Slowly drizzle the beaten eggs into the pot while stirring gently to create ribbons of egg throughout the soup.
  6. Season with salt to taste and add chopped green onions just before serving.
