Steps
- In a pot, bring the dashi stock to a simmer over medium heat.
- Add the sliced shiitake mushrooms and diced carrot to the pot, cooking for about 5 minutes until softened.
- Stir in the cooked white rice, spinach, soy sauce, and mirin, mixing well.
