Ingredients

  • Dashi stock - 500 ml
  • Carrot - 1 medium, sliced thinly
  • Daikon radish - 100 g, sliced thinly
  • Shiitake mushrooms - 4, sliced
  • Spinach - 100 g, washed and roughly chopped
  • Mochi (rice cake) - 2 pieces
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Green onion - 1, finely chopped for garnish
  • Salt - to taste

Steps

  1. Prepare the dashi stock by bringing 500 ml of water to a simmer and adding dashi powder according to package instructions.
  2. Once the stock is ready, add the sliced carrot and daikon radish to the pot and simmer for about 5 minutes until they start to soften.
  3. Add the sliced shiitake mushrooms to the pot and continue to simmer for another 5 minutes.
  4. Stir in the soy sauce and mirin, adjusting the seasoning with salt as needed.
  5. Add the chopped spinach to the soup and cook for an additional 2-3 minutes until wilted.
  6. While the soup is simmering, grill or toast the mochi until golden and puffy.
  7. To serve, place one piece of grilled mochi in each bowl and ladle the hot soup over it.
  8. Garnish with chopped green onion and serve warm.
