Ingredients

  • Dashi broth - 500 ml
  • Mochi (rice cakes) - 2 pieces
  • Carrot - 1 medium, sliced
  • Daikon radish - 100 grams, sliced
  • Spinach - 50 grams, blanched
  • Chives - 2 tablespoons, chopped
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Salt - to taste
  • Sesame oil - 1 teaspoon

Steps

  1. In a pot, bring the dashi broth to a simmer over medium heat.
  2. Add the sliced carrot and daikon radish to the pot and cook for about 10 minutes until tender.
  3. Stir in the soy sauce and mirin, adjusting the seasoning with salt if needed.
  4. While the vegetables are cooking, lightly grill or toast the mochi until golden and slightly puffed.
  5. Add the blanched spinach to the soup and heat through for another 2 minutes.
  6. To serve, place the grilled mochi in bowls and ladle the hot soup with vegetables over it.
  7. Garnish with chopped chives and a drizzle of sesame oil before serving.
