- Spinach - 50 grams, blanched

- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Salt - to taste
- Sesame oil - 1 teaspoon
Steps
- In a pot, bring the dashi broth to a simmer over medium heat.
- Add the sliced carrot and daikon radish to the pot and cook for about 10 minutes until tender.
- Stir in the soy sauce and mirin, adjusting the seasoning with salt if needed.
- While the vegetables are cooking, lightly grill or toast the mochi until golden and slightly puffed.
- Add the blanched spinach to the soup and heat through for another 2 minutes.
- To serve, place the grilled mochi in bowls and ladle the hot soup with vegetables over it.
- Garnish with chopped chives and a drizzle of sesame oil before serving.
