Zenzai Sweet Red Bean Soup

Ingredients
- adzuki beans - 100 grams
- water - 500 ml
- sugar - 50 grams
- salt - a pinch
- coconut milk - 100 ml
- mochi (glutinous rice cake) - 2 pieces
Steps
- Rinse the adzuki beans under cold water and soak them in water for 4 hours or overnight.
- Drain the soaked beans and place them in a pot with 500 ml of fresh water.
- Bring the water to a boil over medium heat, then reduce to low heat and simmer for about 30 minutes, or until the beans are tender.
- Add the sugar and a pinch of salt to the pot, stir well, and continue to simmer for another 10 minutes until the sugar is dissolved and the soup thickens slightly.
- In a separate pot, heat the coconut milk until warm, then remove from heat.
- Prepare the mochi by cutting it into small pieces or heating it in the microwave for a few seconds until soft.
- To serve, ladle the sweet red bean soup into bowls, top with the warm coconut milk, and add the mochi pieces.
