Ingredients

  • Adzuki beans - 100 grams
  • Water - 500 milliliters
  • Sugar - 60 grams
  • Salt - a pinch
  • Kombu (dried kelp) - 1 piece (10 cm)
  • Mochi (glutinous rice cake) - 2 pieces
  • Matcha powder (optional) - 1 teaspoon

Steps

  1. Rinse the adzuki beans under cold water and remove any debris.
  2. Soak the beans in water for at least 4 hours or overnight.
  3. In a pot, combine the soaked beans, 500 milliliters of fresh water, and the piece of kombu.
  4. Bring the mixture to a boil, then reduce to a simmer and cook for about 30 minutes until the beans are tender.
  5. Remove the kombu and add the sugar and a pinch of salt to the pot, stirring until dissolved.
  6. Simmer for an additional 10 minutes to let the flavors meld.
  7. In a separate pot, boil water and gently cook the mochi pieces for about 5 minutes until they are soft and chewy.
  8. Serve the sweet red bean soup in bowls, topped with the mochi and a sprinkle of matcha powder if desired.
