Ingredients
- Adzuki beans - 100 grams
- Water - 500 milliliters
- Sugar - 60 grams
- Salt - a pinch
- Kombu (dried kelp) - 1 piece (10 cm)
- Mochi (glutinous rice cake) - 2 pieces
- Matcha powder (optional) - 1 teaspoon
Steps
- Rinse the adzuki beans under cold water and remove any debris.
- Soak the beans in water for at least 4 hours or overnight.
- In a pot, combine the soaked beans, 500 milliliters of fresh water, and the piece of kombu.
- Bring the mixture to a boil, then reduce to a simmer and cook for about 30 minutes until the beans are tender.
- Remove the kombu and add the sugar and a pinch of salt to the pot, stirring until dissolved.
- Simmer for an additional 10 minutes to let the flavors meld.
- In a separate pot, boil water and gently cook the mochi pieces for about 5 minutes until they are soft and chewy.
- Serve the sweet red bean soup in bowls, topped with the mochi and a sprinkle of matcha powder if desired.
