Zenzai
Zenzai is a delightful Japanese sweet dish made with adzuki beans simmered in a rich, sweet syrup, traditionally served with glutinous rice dumplings or mochi. This gluten-free version captures the authentic flavors while providing a comforting and satisfying snack.

Ingredients
- Adzuki beans - 100 grams
- Water - 500 ml
- Sugar - 60 grams
- Salt - a pinch
- Mochi (glutinous rice cake) - 100 grams
- Matcha powder (for garnish) - 1 teaspoon
Steps
- Rinse the adzuki beans under cold water and soak them in water for at least 4 hours or overnight.
- Drain the soaked beans and add them to a pot with 500 ml of fresh water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer the beans for about 30 minutes, or until they are soft.
- Add the sugar and a pinch of salt to the pot, stirring to dissolve. Continue to simmer for another 10 minutes until the mixture thickens slightly.
- While the beans are simmering, prepare the mochi by cutting it into small, bite-sized pieces.
- In a separate pan, lightly toast the mochi pieces over low heat until they are golden and slightly crispy on the outside.
- Serve the sweet adzuki beans in bowls, topped with the toasted mochi and a sprinkle of matcha powder.
