Zenzai

Zenzai is a delightful Japanese sweet dish made with adzuki beans simmered in a rich, sweet syrup, traditionally served with glutinous rice dumplings or mochi. This gluten-free version captures the authentic flavors while providing a comforting and satisfying snack.

Ingredients

  • Adzuki beans - 100 grams
  • Water - 500 ml
  • Sugar - 60 grams
  • Salt - a pinch
  • Mochi (glutinous rice cake) - 100 grams
  • Matcha powder (for garnish) - 1 teaspoon

Steps

  1. Rinse the adzuki beans under cold water and soak them in water for at least 4 hours or overnight.
  2. Drain the soaked beans and add them to a pot with 500 ml of fresh water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low and simmer the beans for about 30 minutes, or until they are soft.
  4. Add the sugar and a pinch of salt to the pot, stirring to dissolve. Continue to simmer for another 10 minutes until the mixture thickens slightly.
  5. While the beans are simmering, prepare the mochi by cutting it into small, bite-sized pieces.
  6. In a separate pan, lightly toast the mochi pieces over low heat until they are golden and slightly crispy on the outside.
  7. Serve the sweet adzuki beans in bowls, topped with the toasted mochi and a sprinkle of matcha powder.
