Ingredients

  • Mirin - 2 tablespoons
  • Green onions (sliced) - 2 tablespoons
  • Nori (seaweed) - 1 sheet, cut into strips
  • Shiitake mushrooms (sliced) - 100 grams
  • Carrot (julienned) - 50 grams
  • Cucumber (julienned) - 50 grams
  • Sesame seeds (toasted) - 1 tablespoon

Steps

  1. Bring 1 liter of water to a boil in a pot, then add the soba noodles and cook according to package instructions, usually about 5-7 minutes until al dente.
  2. While the noodles are cooking, prepare the soup base by combining the vegan dashi stock, soy sauce, and mirin in a separate pot and bring it to a gentle simmer.
  3. Add the sliced shiitake mushrooms to the simmering soup base and cook for about 5 minutes until tender.
  4. Once the soba noodles are cooked, drain them and rinse under cold water to stop the cooking process.
  5. To serve, place a portion of the cold soba noodles in a bowl, ladle the hot dashi soup over the noodles, and garnish with julienned carrots, cucumbers, green onions, nori strips, and toasted sesame seeds.
