Steps
- Bring 1 liter of water to a boil in a pot, then add the soba noodles and cook according to package instructions, usually about 5-7 minutes until al dente.
- While the noodles are cooking, prepare the soup base by combining the vegan dashi stock, soy sauce, and mirin in a separate pot and bring it to a gentle simmer.
