Ingredients

  • Soba noodles - 200 grams
  • Edamame (shelled) - 100 grams
  • Tofu (firm) - 150 grams
  • Cucumber - 1 medium, julienned
  • Green onions - 2, chopped
  • Sesame seeds - 2 tablespoons
  • Soy sauce - 4 tablespoons
  • Mirin - 2 tablespoons
  • Dashi (or vegetable broth) - 1 cup
  • Wasabi - to taste
  • Nori seaweed - 1 sheet, cut into strips

Steps

  1. Cook the soba noodles according to package instructions, usually about 4-5 minutes, then drain and rinse under cold water to stop cooking.
  2. While the noodles are cooking, bring water to boil and cook the edamame for 3-4 minutes. Drain and set aside.
  3. In a small pot, combine soy sauce, mirin, and dashi. Heat gently until warm, then remove from heat and set aside as dipping sauce.
  4. Press the tofu to remove excess water, then cut it into cubes and pan-fry in a non-stick skillet over medium heat until golden brown, about 5-7 minutes.
  5. Assemble the dish by placing the chilled soba noodles on a plate, topping them with edamame, tofu, cucumber, green onions, and sesame seeds.
  6. Serve with the dipping sauce on the side and garnish with wasabi and nori strips.
