- Soba noodles - 200 grams
- Edamame (shelled) - 100 grams
- Tofu (firm) - 150 grams
- Cucumber - 1 medium, julienned
- Green onions - 2, chopped
- Sesame seeds - 2 tablespoons
- Soy sauce - 4 tablespoons
- Mirin - 2 tablespoons
- Dashi (or vegetable broth) - 1 cup
- Wasabi - to taste
- Nori seaweed - 1 sheet, cut into strips
Steps
- Cook the soba noodles according to package instructions, usually about 4-5 minutes, then drain and rinse under cold water to stop cooking.
- While the noodles are cooking, bring water to boil and cook the edamame for 3-4 minutes. Drain and set aside.
- In a small pot, combine soy sauce, mirin, and dashi. Heat gently until warm, then remove from heat and set aside as dipping sauce.
- Press the tofu to remove excess water, then cut it into cubes and pan-fry in a non-stick skillet over medium heat until golden brown, about 5-7 minutes.
- Assemble the dish by placing the chilled soba noodles on a plate, topping them with edamame, tofu, cucumber, green onions, and sesame seeds.
- Serve with the dipping sauce on the side and garnish with wasabi and nori strips.
