Ingredients

  • Soba noodles - 200 grams
  • Dashi (vegan) - 500 ml
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Scallions - 2, finely chopped
  • Nori (seaweed) - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon, toasted
  • Cucumber - 1 small, julienned
  • Radish - 1 small, thinly sliced
  • Wasabi - to taste

Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions (usually about 5-8 minutes) until al dente.
  2. While the noodles are cooking, prepare the dipping sauce by combining the vegan dashi, soy sauce, and mirin in a small saucepan. Heat gently until warm, then remove from heat.
  3. Once the noodles are cooked, drain them and rinse under cold water to stop the cooking process and cool them down.
  4. Place the cooled soba noodles on a serving plate or individual zaru (bamboo) trays.
  5. Garnish the soba with chopped scallions, nori strips, toasted sesame seeds, cucumber, and radish slices.
  6. Serve with the dipping sauce on the side and a small amount of wasabi for an extra kick.
