Ingredients

  • Cauliflower rice - 200 grams
  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 50 grams, julienned
  • Snow peas - 50 grams, trimmed
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Sea salt - to taste
  • Black sesame seeds - for garnish

Steps

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Stir in the sliced shiitake mushrooms and cook for 4-5 minutes until soft.
  4. Add the julienned carrot and snow peas, cooking for another 3-4 minutes.
  5. Stir in the cauliflower rice and coconut aminos, mixing well to combine all ingredients.
  6. Cook for an additional 5-7 minutes, stirring occasionally until the cauliflower is tender.
  7. Season with sea salt to taste and remove from heat.
  8. Garnish with chopped green onion and black sesame seeds before serving.
