Ingredients

  • Brown rice - 100 grams
  • Quinoa - 50 grams
  • Barley - 50 grams
  • Dried shiitake mushrooms - 5 grams
  • Carrot - 1 medium, diced
  • Spinach - 100 grams, chopped
  • Edamame - 50 grams, shelled
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Water - 300 milliliters
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2, sliced for garnish

Steps

  1. Rinse the brown rice, quinoa, and barley under cold water until the water runs clear, then drain.
  2. Soak the dried shiitake mushrooms in warm water for 15 minutes until softened, then slice them thinly.
  3. In a medium pot, combine the rinsed grains, sliced mushrooms, diced carrot, and water. Add salt and bring to a boil.
  4. Once boiling, reduce the heat to low, cover, and simmer for 25 minutes until the grains are tender and the water is absorbed.
  5. In the last 5 minutes of cooking, stir in the chopped spinach and shelled edamame.
  6. Remove from heat and let it sit covered for an additional 5 minutes.
  7. Drizzle sesame oil and soy sauce over the cooked rice mixture, then fluff with a fork.
  8. Serve warm, garnished with sliced green onions.
