- Brown rice - 100 grams
- Quinoa - 50 grams
- Barley - 50 grams
- Dried shiitake mushrooms - 5 grams
- Carrot - 1 medium, diced
- Spinach - 100 grams, chopped
- Edamame - 50 grams, shelled
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Water - 300 milliliters
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 2, sliced for garnish
Steps
- Rinse the brown rice, quinoa, and barley under cold water until the water runs clear, then drain.
- Soak the dried shiitake mushrooms in warm water for 15 minutes until softened, then slice them thinly.
- In a medium pot, combine the rinsed grains, sliced mushrooms, diced carrot, and water. Add salt and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 25 minutes until the grains are tender and the water is absorbed.
- In the last 5 minutes of cooking, stir in the chopped spinach and shelled edamame.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Drizzle sesame oil and soy sauce over the cooked rice mixture, then fluff with a fork.
- Serve warm, garnished with sliced green onions.
