  • Agar-agar powder - 2 grams

  • Salt - a pinch

Steps

  1. In a small saucepan, combine milk, heavy cream, and yuzu juice over medium heat, stirring until just warmed.
  2. In a separate bowl, mix granulated sugar, cornstarch, agar-agar powder, and salt.
  3. Gradually add the dry mixture to the warm milk mixture, whisking continuously to prevent lumps.
  4. Continue to cook the mixture over medium heat until it thickens, about 5-7 minutes, then remove from heat.
  5. Stir in vanilla extract and let the mixture cool slightly.
  6. Pour the pudding mixture into two small serving bowls or cups and refrigerate for at least 2 hours until set.
  7. Once set, serve chilled and garnish with yuzu zest or fresh fruit if desired.
