Ingredients

  • Yuzu juice - 60 ml
  • Zest of 1 yuzu
  • Granulated sugar - 50 g
  • Egg whites - 2 large
  • Heavy cream - 120 ml
  • Gelatin powder - 1 tsp
  • Water - 30 ml

Steps

  1. In a small bowl, sprinkle gelatin over 30 ml of water and let it bloom for about 5 minutes.
  2. In a saucepan, combine yuzu juice, yuzu zest, and granulated sugar over low heat, stirring until the sugar dissolves.
  3. Remove from heat and add the bloomed gelatin to the yuzu mixture, stirring until fully dissolved. Allow to cool to room temperature.
  4. In a mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the yuzu mixture until just combined.
  5. In another bowl, whip the heavy cream until soft peaks form, then fold this into the yuzu and egg white mixture until fully incorporated.
  6. Spoon the mousse into serving glasses and refrigerate for at least 2 hours or until set.
  7. Garnish with additional yuzu zest or a slice of yuzu before serving.
