Ingredients
- Yuzu juice - 60 ml
- Zest of 1 yuzu
- Granulated sugar - 50 g
- Egg whites - 2 large
- Heavy cream - 120 ml
- Gelatin powder - 1 tsp
- Water - 30 ml
Steps
- In a small bowl, sprinkle gelatin over 30 ml of water and let it bloom for about 5 minutes.
- In a saucepan, combine yuzu juice, yuzu zest, and granulated sugar over low heat, stirring until the sugar dissolves.
- Remove from heat and add the bloomed gelatin to the yuzu mixture, stirring until fully dissolved. Allow to cool to room temperature.
- In a mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the yuzu mixture until just combined.
- In another bowl, whip the heavy cream until soft peaks form, then fold this into the yuzu and egg white mixture until fully incorporated.
- Spoon the mousse into serving glasses and refrigerate for at least 2 hours or until set.
- Garnish with additional yuzu zest or a slice of yuzu before serving.
