Ingredients

  • All-purpose flour - 100 grams
  • Granulated sugar - 80 grams
  • Baking powder - 1 teaspoon

  • Unsalted butter, softened - 40 grams
  • Milk - 50 ml
  • Yuzu juice - 30 ml
  • Vanilla extract - 1 teaspoon
  • Egg - 1 large
  • Powdered sugar - 50 grams (for frosting)
  • Heavy cream - 50 ml (for frosting)
  • Yuzu zest - 1 teaspoon (for frosting)

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with 2 cupcake liners.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, yuzu juice, and vanilla extract to the butter mixture, and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  6. Divide the batter evenly between the two lined cupcake molds.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. While the cupcakes cool, prepare the frosting by whipping the heavy cream until soft peaks form, then gently fold in the powdered sugar and yuzu zest.
  9. Once the cupcakes are completely cool, pipe or spread the yuzu cream frosting on top of each cupcake.
  10. Garnish with additional yuzu zest if desired, and serve.
