- Yuzu zest - 1 teaspoon (for frosting)
Steps
- Preheat the oven to 180°C (350°F) and line a muffin tin with 2 cupcake liners.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg, yuzu juice, and vanilla extract to the butter mixture, and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
- Divide the batter evenly between the two lined cupcake molds.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- While the cupcakes cool, prepare the frosting by whipping the heavy cream until soft peaks form, then gently fold in the powdered sugar and yuzu zest.
- Once the cupcakes are completely cool, pipe or spread the yuzu cream frosting on top of each cupcake.
- Garnish with additional yuzu zest if desired, and serve.
