- Cooked quinoa - 100 grams
- Black beans - 200 grams
- Yuzu juice - 30 ml
- Garlic, minced - 2 cloves
- Green onion, finely chopped - 2 tablespoons
- Panko breadcrumbs - 50 grams
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato, sliced - 1
- Cucumber, sliced - 1/2
- Yuzu mayo - 2 tablespoons
Steps
- In a mixing bowl, mash the black beans with a fork until mostly smooth.
- Add the cooked quinoa, minced garlic, green onion, yuzu juice, soy sauce, salt, and black pepper to the mashed beans and mix well.
- Gradually stir in the panko breadcrumbs until the mixture holds together.
- Divide the mixture into two equal portions and shape them into burger patties.
- Heat olive oil in a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until golden brown.
- While the patties are cooking, toast the burger buns until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a patty, tomato slices, cucumber slices, and a generous dollop of yuzu mayo.
- Top with the other half of the bun and serve immediately.
