- Chickpeas - 200 grams, cooked and drained
- Cooked brown rice - 100 grams
- Fresh cilantro - 30 grams, chopped
- Yuzu juice - 30 ml
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Panko breadcrumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2, vegan
- Lettuce leaves - 2, for serving
- Sliced cucumber - 1/2, for serving
- Sliced avocado - 1/2, for serving
- Yuzu mayo (vegan) - 2 tablespoons, for serving
Steps
- In a large bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some texture.
- Add the cooked brown rice, chopped cilantro, yuzu juice, minced garlic, grated ginger, soy sauce, sesame oil, panko breadcrumbs, salt, and black pepper to the bowl. Mix until well combined.
- Form the mixture into two patties, ensuring they hold together well.
- Heat a non-stick skillet over medium heat and lightly grease with a little sesame oil.
- Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
- Assemble the burgers by placing a patty on each bun, topped with lettuce, cucumber slices, and avocado.
- Spread yuzu mayo on the top bun and close the burgers. Serve immediately.
