Ingredients

  • Chickpeas - 200 grams, cooked and drained
  • Cooked brown rice - 100 grams
  • Fresh cilantro - 30 grams, chopped
  • Yuzu juice - 30 ml
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Panko breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2, vegan
  • Lettuce leaves - 2, for serving
  • Sliced cucumber - 1/2, for serving
  • Sliced avocado - 1/2, for serving
  • Yuzu mayo (vegan) - 2 tablespoons, for serving

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some texture.
  2. Add the cooked brown rice, chopped cilantro, yuzu juice, minced garlic, grated ginger, soy sauce, sesame oil, panko breadcrumbs, salt, and black pepper to the bowl. Mix until well combined.
  3. Form the mixture into two patties, ensuring they hold together well.
  4. Heat a non-stick skillet over medium heat and lightly grease with a little sesame oil.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a patty on each bun, topped with lettuce, cucumber slices, and avocado.
  8. Spread yuzu mayo on the top bun and close the burgers. Serve immediately.
