Steps
- In a pot, bring the dashi broth to a simmer over medium heat.

- Meanwhile, cook the soba noodles according to package instructions, usually about 4-5 minutes in boiling water.
- Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
- Divide the soba noodles between two bowls.
- Ladle the warm dashi broth with tofu over the noodles.
- Garnish with chopped green onions, nori strips, and toasted sesame seeds before serving.
