Ingredients

  • Soba noodles - 150 grams
  • Silken tofu - 200 grams
  • Dashi broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Nori seaweed - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. In a pot, bring the dashi broth to a simmer over medium heat.
  2. Add the soy sauce and mirin to the broth, stirring gently to combine.
  3. Carefully add the silken tofu to the broth and simmer for 5 minutes, allowing it to warm through.
  4. Meanwhile, cook the soba noodles according to package instructions, usually about 4-5 minutes in boiling water.
  5. Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
  6. Divide the soba noodles between two bowls.
  7. Ladle the warm dashi broth with tofu over the noodles.
  8. Garnish with chopped green onions, nori strips, and toasted sesame seeds before serving.
