Ingredients

  • Japanese short-grain rice - 150 grams
  • Silken tofu - 200 grams
  • Dashi stock - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Green onions - 2 stalks, finely chopped
  • Shiso leaves - 4 leaves, shredded (optional)
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, add the soaked rice and 200 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
  3. In a separate pot, bring the dashi stock to a gentle simmer. Cut the silken tofu into cubes and carefully add them to the dashi broth. Simmer for 5 minutes until warmed through.
  4. Stir in the soy sauce, mirin, and add salt to taste into the dashi broth with tofu.
  5. Once the rice is cooked, fluff it with a fork and divide it into two bowls.
  6. Carefully spoon the warm tofu and dashi broth over the rice.
  7. Garnish with chopped green onions, shredded shiso leaves, and toasted sesame seeds before serving.
