Ingredients
- Japanese short-grain rice - 150 grams
- Silken tofu - 200 grams
- Dashi stock - 500 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Green onions - 2 stalks, finely chopped
- Shiso leaves - 4 leaves, shredded (optional)
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste
Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, add the soaked rice and 200 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
- In a separate pot, bring the dashi stock to a gentle simmer. Cut the silken tofu into cubes and carefully add them to the dashi broth. Simmer for 5 minutes until warmed through.
- Stir in the soy sauce, mirin, and add salt to taste into the dashi broth with tofu.
- Once the rice is cooked, fluff it with a fork and divide it into two bowls.
- Carefully spoon the warm tofu and dashi broth over the rice.
- Garnish with chopped green onions, shredded shiso leaves, and toasted sesame seeds before serving.
