- Silken tofu - 300 grams
- Dashi stock (vegan) - 500 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Chopped green onions - 2 tablespoons
- Grated daikon radish - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Nori seaweed (sheets) - 1 small piece, cut into strips
Steps
- In a medium saucepan, bring the vegan dashi stock to a gentle simmer over medium heat.
- While the stock is heating, carefully cut the silken tofu into squares (about 4 pieces) and set aside.
- Once the dashi is simmering, gently add the tofu pieces to the pot, being careful not to break them.
- Allow the tofu to warm in the dashi for about 5-7 minutes, ensuring it is heated through but not boiling.
- In a small bowl, mix the soy sauce and mirin to create the dipping sauce.
- Once the tofu is warmed, carefully transfer it to serving bowls using a slotted spoon.
- Ladle some of the warm dashi broth over the tofu in each bowl.
- Top the tofu with chopped green onions, grated daikon, sesame seeds, and strips of nori.
- Serve immediately with the dipping sauce on the side.
