- Yuba (tofu skin) - 100 grams
- Firm tofu - 200 grams, drained
- Shiitake mushrooms - 100 grams, finely chopped
- Green onions - 2 stalks, chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Coconut aminos - 2 tablespoons
- Almond flour - 3 tablespoons
- Sesame oil - 1 tablespoon
- Egg - 1, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lettuce leaves - 4, for serving
- Sliced avocado - 1, for topping
- Pickled ginger - 2 tablespoons, for garnish
Steps
- In a mixing bowl, combine the drained firm tofu, chopped yuba, shiitake mushrooms, green onions, minced garlic, grated ginger, coconut aminos, almond flour, sesame oil, beaten egg, salt, and black pepper. Mix until well combined.
- Form the mixture into 2 patties, ensuring they hold together well.
- Heat a non-stick skillet over medium heat and add a little sesame oil. Cook the patties for about 5-6 minutes on each side until golden brown and heated through.
- While the patties are cooking, prepare the serving plates with lettuce leaves as the base. Once the patties are cooked, place each patty on a lettuce leaf.
- Top each burger with sliced avocado and garnish with pickled ginger. Serve immediately.
