Ingredients

  • Yuba (tofu skin) - 200 grams
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sesame oil - 10 ml
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Shiitake mushrooms - 100 grams, sliced
  • Water - 250 ml
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. In a saucepan, combine water, soy sauce, mirin, garlic, and ginger. Bring to a simmer over medium heat.
  2. Add the shiitake mushrooms and let them cook for about 5 minutes until tender.
  3. Gently add the yuba to the saucepan and let it simmer for an additional 5 minutes, absorbing the flavors.
  4. In a separate skillet, heat the sesame oil over medium heat. Add the chopped green onions and sauté for 2 minutes until fragrant.
  5. Carefully remove the yuba and mushrooms from the saucepan and place them in the skillet with green onions. Toss gently to combine.
  6. Cook for another 2-3 minutes until everything is heated through. Serve hot, garnished with toasted sesame seeds.
