Ingredients
- Yuba (tofu skin) - 200 grams
- Soy sauce - 30 ml
- Mirin - 15 ml
- Sesame oil - 10 ml
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Shiitake mushrooms - 100 grams, sliced
- Water - 250 ml
- Sesame seeds - 1 tablespoon, toasted
Steps
- In a saucepan, combine water, soy sauce, mirin, garlic, and ginger. Bring to a simmer over medium heat.
- Add the shiitake mushrooms and let them cook for about 5 minutes until tender.
- Gently add the yuba to the saucepan and let it simmer for an additional 5 minutes, absorbing the flavors.
- In a separate skillet, heat the sesame oil over medium heat. Add the chopped green onions and sauté for 2 minutes until fragrant.
- Carefully remove the yuba and mushrooms from the saucepan and place them in the skillet with green onions. Toss gently to combine.
- Cook for another 2-3 minutes until everything is heated through. Serve hot, garnished with toasted sesame seeds.
