Ingredients
- Yuba (tofu skin) - 100g
- Shredded cabbage - 50g
- Sliced shiitake mushrooms - 50g
- Julienned carrots - 30g
- Green onions, chopped - 2 stalks
- Sesame oil - 1 tablespoon
- Soy sauce (low sodium) - 1 tablespoon
- Ginger, grated - 1 teaspoon
- Garlic, minced - 1 clove
- Salt - to taste
- Black pepper - to taste
- Rice vinegar - 1 teaspoon
Steps
- Soak the yuba in warm water for about 10 minutes until softened, then drain and set aside.
- In a pan, heat the sesame oil over medium heat and sauté the garlic and ginger until fragrant, about 1 minute.
- Add the shiitake mushrooms, shredded cabbage, and julienned carrots to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Stir in the soy sauce, rice vinegar, and season with salt and black pepper to taste. Remove from heat and let the mixture cool slightly.
- On a clean surface, lay out a piece of yuba and place a spoonful of the vegetable mixture at one end. Roll it tightly, tucking in the sides as you go.
- Repeat the process with the remaining yuba and filling.
- Heat a non-stick pan over medium heat and place the rolls seam-side down. Cook for about 4-5 minutes until golden brown on one side, then flip and cook for another 4-5 minutes.
- Remove from the pan and slice each roll in half before serving. Garnish with chopped green onions.
