Ingredients

  • Yuba (tofu skin) - 100 grams
  • Cauliflower rice - 200 grams
  • Carrot - 50 grams, finely diced
  • Green onions - 2 stalks, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Mirin - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Pepper - to taste
  • Water - 1 cup

Steps

  1. Soak the yuba in warm water for about 10 minutes until softened, then drain and slice into thin strips.
  2. In a large skillet, heat sesame oil over medium heat and add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. Add the finely diced carrot to the skillet and cook for another 3-4 minutes until softened.
  4. Incorporate the yuba strips into the skillet, followed by the cauliflower rice, and stir well to combine.
  5. Pour in soy sauce and mirin, and add water. Stir everything together and bring to a gentle simmer.
  6. Cover the skillet and let it cook for about 10 minutes until the cauliflower rice is tender.
  7. Remove the lid, season with salt and pepper to taste, and stir in the chopped green onions.
  8. Serve hot, garnished with additional green onions if desired.
