- Yuba (tofu skin) - 100 grams
- Cauliflower rice - 200 grams
- Carrot - 50 grams, finely diced
- Green onions - 2 stalks, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Mirin - 1 teaspoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Pepper - to taste
- Water - 1 cup
Steps
- Soak the yuba in warm water for about 10 minutes until softened, then drain and slice into thin strips.
- In a large skillet, heat sesame oil over medium heat and add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
- Add the finely diced carrot to the skillet and cook for another 3-4 minutes until softened.
- Incorporate the yuba strips into the skillet, followed by the cauliflower rice, and stir well to combine.
- Pour in soy sauce and mirin, and add water. Stir everything together and bring to a gentle simmer.
- Cover the skillet and let it cook for about 10 minutes until the cauliflower rice is tender.
- Remove the lid, season with salt and pepper to taste, and stir in the chopped green onions.
- Serve hot, garnished with additional green onions if desired.
