Ingredients

  • Yuba (tofu skin) - 200g

  • Coconut aminos - 1 tablespoon
  • Cherry tomatoes - 100g, halved
  • Shiitake mushrooms - 100g, sliced
  • Spinach - 50g, fresh
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Sea salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Lay the yuba sheets flat on a baking tray lined with parchment paper, overlapping them slightly to form a pizza crust.
  3. Brush the yuba crust with olive oil and season with a pinch of sea salt and black pepper.
  4. In a small bowl, mix the miso paste and coconut aminos to create a sauce, then spread it evenly over the yuba crust.
  5. Arrange the cherry tomatoes, shiitake mushrooms, and spinach evenly on top of the miso sauce.
  6. Sprinkle chopped green onions and sesame seeds over the toppings.
  7. Bake in the preheated oven for 15-20 minutes, or until the yuba is slightly crispy and the vegetables are tender.
  8. Remove from the oven, let it cool for a minute, then slice and serve hot.
