Ingredients
- Yuba (tofu skin) - 200 grams
- Cooked quinoa - 100 grams
- Green onion - 2 tablespoons, finely chopped
- Carrot - 1 small, grated
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Miso paste - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cornstarch - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- In a mixing bowl, combine the yuba, cooked quinoa, green onion, grated carrot, minced garlic, grated ginger, soy sauce, miso paste, sesame oil, cornstarch, salt, and black pepper. Mix until well combined.
- Shape the mixture into two burger patties.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side, or until golden brown and firm.
- While the patties are cooking, lightly toast the burger buns in another skillet until golden.
- Assemble the burgers by placing lettuce on the bottom half of each bun, followed by the yuba patty, sliced tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your favorite condiments and enjoy!
