Ingredients

  • Yuba (tofu skin) - 200 grams
  • Cooked quinoa - 100 grams
  • Green onion - 2 tablespoons, finely chopped
  • Carrot - 1 small, grated
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Miso paste - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced

Steps

  1. In a mixing bowl, combine the yuba, cooked quinoa, green onion, grated carrot, minced garlic, grated ginger, soy sauce, miso paste, sesame oil, cornstarch, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into two burger patties.
  3. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side, or until golden brown and firm.
  4. While the patties are cooking, lightly toast the burger buns in another skillet until golden.
  5. Assemble the burgers by placing lettuce on the bottom half of each bun, followed by the yuba patty, sliced tomato, and avocado. Top with the other half of the bun.
  6. Serve immediately with your favorite condiments and enjoy!
