Ingredients

  • Yuba (tofu skin) - 100 grams
  • Firm tofu - 150 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 50 grams, fresh
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Tamari sauce - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the crumbled tofu to the skillet, followed by tamari sauce, nutritional yeast, oregano, black pepper, and salt. Cook for 5-7 minutes until the tofu is heated through and slightly golden.
  4. While the tofu is cooking, prepare the yuba crust. Lay the yuba sheets on a baking tray lined with parchment paper, overlapping them slightly to form a round shape.
  5. Drizzle the remaining olive oil over the yuba and lightly season with salt and pepper. Bake in the preheated oven for 10 minutes until the edges are crispy.
  6. Remove the yuba crust from the oven and spread the tofu mixture evenly on top.
  7. Scatter the halved cherry tomatoes and fresh spinach over the tofu, then return the pizza to the oven. Bake for an additional 10 minutes.
  8. Once done, remove from oven, garnish with chopped green onions, and let it cool for a couple of minutes before slicing.
