Ingredients

  • Yuba (tofu skin) - 100 grams
  • Water - 500 ml
  • Soy sauce (or coconut aminos for Paleo) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced

Steps

  1. In a medium saucepan, bring 500 ml of water to a boil.
  2. Once boiling, gently add the yuba (tofu skin) and cook for 3-5 minutes until softened.
  3. Remove the yuba from the water and drain it well. Allow it to cool slightly before handling.
  4. In a small bowl, combine the soy sauce (or coconut aminos), sesame oil, rice vinegar, grated ginger, and minced garlic to create the dressing.
  5. Cut the softened yuba into bite-sized pieces and place them in a serving bowl.
  6. Pour the dressing over the yuba and toss gently to coat.
  7. Sprinkle chopped green onions and sesame seeds on top before serving.
