- Glutinous rice flour - 100 grams
- Granulated sugar - 50 grams
- Water - 120 ml
- Cinnamon powder - 1 teaspoon
- Red bean paste - 80 grams
- Cornstarch - for dusting
Steps
- In a mixing bowl, combine glutinous rice flour, granulated sugar, and cinnamon powder.
- Gradually add water to the dry ingredients, stirring until a smooth batter forms.
- Transfer the mixture to a non-stick saucepan and cook over low heat, stirring constantly until it thickens and becomes a dough-like consistency (about 10 minutes).
- Remove the dough from the pan and let it cool slightly until manageable.
- Dust a clean surface with cornstarch, then place the dough on it and flatten it using your hands or a rolling pin to about 1 cm thickness.
- Cut the dough into squares of about 5 cm x 5 cm.
- Place a small amount (about 1 teaspoon) of red bean paste in the center of each square.
- Fold the corners of the dough over the filling to form a parcel and pinch to seal.
- Dust the finished Yatsuhashi with cornstarch to prevent sticking.
