Ingredients

  • Glutinous rice flour - 100 grams
  • Granulated sugar - 50 grams
  • Water - 120 ml
  • Cinnamon powder - 1 teaspoon
  • Red bean paste - 80 grams
  • Cornstarch - for dusting

Steps

  1. In a mixing bowl, combine glutinous rice flour, granulated sugar, and cinnamon powder.
  2. Gradually add water to the dry ingredients, stirring until a smooth batter forms.
  3. Transfer the mixture to a non-stick saucepan and cook over low heat, stirring constantly until it thickens and becomes a dough-like consistency (about 10 minutes).
  4. Remove the dough from the pan and let it cool slightly until manageable.
  5. Dust a clean surface with cornstarch, then place the dough on it and flatten it using your hands or a rolling pin to about 1 cm thickness.
  6. Cut the dough into squares of about 5 cm x 5 cm.
  7. Place a small amount (about 1 teaspoon) of red bean paste in the center of each square.
  8. Fold the corners of the dough over the filling to form a parcel and pinch to seal.
  9. Dust the finished Yatsuhashi with cornstarch to prevent sticking.
  10. Serve at room temperature and enjoy your gluten-free Yatsuhashi!
