Ingredients

  • Carrot - 100 grams, sliced
  • Daikon radish - 100 grams, diced
  • Shiitake mushrooms - 50 grams, sliced
  • Broccoli - 100 grams, cut into florets
  • Green onion - 2 stalks, chopped
  • Miso paste - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Tofu - 100 grams, cubed
  • Seaweed (wakame) - 1 tablespoon, dried

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Add the sliced carrots, diced daikon, and shiitake mushrooms to the pot. Stir-fry for 5 minutes until the vegetables start to soften.
  3. Pour in the vegetable broth and bring to a gentle boil. Reduce the heat and simmer for 10 minutes.
  4. Stir in the broccoli, tofu, and dried wakame seaweed. Continue to simmer for another 5 minutes until the broccoli is tender.
  5. In a small bowl, mix the miso paste with a little hot broth until smooth, then stir it back into the soup along with the soy sauce and chopped green onion. Heat gently for 2 more minutes.
  6. Serve hot, garnished with additional green onions if desired.
