- Daikon radish - 100 grams, diced
- Shiitake mushrooms - 50 grams, sliced
- Broccoli - 100 grams, cut into florets
- Green onion - 2 stalks, chopped
- Miso paste - 2 tablespoons
- Vegetable broth - 500 milliliters
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Tofu - 100 grams, cubed
- Seaweed (wakame) - 1 tablespoon, dried
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced carrots, diced daikon, and shiitake mushrooms to the pot. Stir-fry for 5 minutes until the vegetables start to soften.
- Pour in the vegetable broth and bring to a gentle boil. Reduce the heat and simmer for 10 minutes.
- Stir in the broccoli, tofu, and dried wakame seaweed. Continue to simmer for another 5 minutes until the broccoli is tender.
- In a small bowl, mix the miso paste with a little hot broth until smooth, then stir it back into the soup along with the soy sauce and chopped green onion. Heat gently for 2 more minutes.
- Serve hot, garnished with additional green onions if desired.
