Ingredients

  • Spaghetti - 200 grams
  • Broccoli florets - 100 grams
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Snow peas - 100 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 3 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 100 ml
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the spaghetti according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  3. Add the broccoli florets, julienned carrot, sliced red bell pepper, and snow peas to the skillet. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.
  4. In a small bowl, mix together the soy sauce, mirin, and vegetable broth. Pour this sauce over the sautéed vegetables in the skillet.
  5. Add the cooked spaghetti to the skillet, tossing everything together to ensure the pasta is well coated with the sauce and heated through. Season with salt and black pepper to taste.
  6. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
