Yasai no Tempura

- Sweet potato - 100 grams
- Zucchini - 100 grams
- Carrot - 100 grams
- Shiitake mushrooms - 100 grams
- Green bell pepper - 100 grams
- All-purpose flour - 50 grams
- Cornstarch - 30 grams
- Cold water - 150 ml
- Salt - 1/4 teaspoon
- Vegetable oil for frying - 500 ml
Steps
- Prepare the vegetables: Peel the sweet potato and carrot, then cut all vegetables into uniform pieces, about 1 cm thick.
- In a bowl, mix the all-purpose flour, cornstarch, and salt together.
- Gradually add the cold water to the flour mixture, stirring gently until just combined. The batter should be slightly lumpy.
- Heat the vegetable oil in a deep pan or pot over medium-high heat until it reaches 180°C (350°F).
- Dip each piece of vegetable into the batter, allowing any excess to drip off.
- Carefully place the battered vegetables into the hot oil, frying in small batches to avoid overcrowding.
- Fry for about 2-3 minutes or until golden brown and crispy, turning occasionally to ensure even cooking.
- Using a slotted spoon, remove the tempura from the oil and drain on paper towels to remove excess oil.
- Serve immediately with a dipping sauce of your choice, such as tentsuyu (a mixture of dashi, soy sauce, and mirin).
