Ingredients

  • Sweet potato - 100 grams
  • Zucchini - 100 grams
  • Carrot - 100 grams
  • Shiitake mushrooms - 100 grams
  • Green bell pepper - 100 grams
  • All-purpose flour - 50 grams
  • Cornstarch - 30 grams
  • Cold water - 150 ml
  • Salt - 1/4 teaspoon
  • Vegetable oil for frying - 500 ml

Steps

  1. Prepare the vegetables: Peel the sweet potato and carrot, then cut all vegetables into uniform pieces, about 1 cm thick.
  2. In a bowl, mix the all-purpose flour, cornstarch, and salt together.
  3. Gradually add the cold water to the flour mixture, stirring gently until just combined. The batter should be slightly lumpy.
  4. Heat the vegetable oil in a deep pan or pot over medium-high heat until it reaches 180°C (350°F).
  5. Dip each piece of vegetable into the batter, allowing any excess to drip off.
  6. Carefully place the battered vegetables into the hot oil, frying in small batches to avoid overcrowding.
  7. Fry for about 2-3 minutes or until golden brown and crispy, turning occasionally to ensure even cooking.
  8. Using a slotted spoon, remove the tempura from the oil and drain on paper towels to remove excess oil.
  9. Serve immediately with a dipping sauce of your choice, such as tentsuyu (a mixture of dashi, soy sauce, and mirin).
