Ingredients

  • Carrot - 100 grams
  • Daikon radish - 100 grams
  • Shiitake mushrooms - 100 grams
  • Snow peas - 50 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 2 tablespoons
  • Dashi stock - 200 milliliters
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2 stalks, chopped

Steps

  1. Peel and slice the carrot and daikon radish into thin rounds.
  2. Remove the stems from the shiitake mushrooms and slice them.
  3. Trim the ends of the snow peas and set them aside.
  4. In a medium saucepan, combine the dashi stock, soy sauce, mirin, and sugar, and bring to a gentle simmer over medium heat.
  5. Add the sliced carrot and daikon radish to the saucepan, and simmer for about 10 minutes until they begin to soften.
  6. Add the shiitake mushrooms and continue to simmer for an additional 5 minutes.
  7. Stir in the snow peas and sesame oil, and simmer for another 3-5 minutes until all vegetables are tender but still vibrant.
  8. Remove from heat and garnish with chopped green onions before serving.
