- Dashi stock - 200 milliliters
- Sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Green onions - 2 stalks, chopped
Steps
- Peel and slice the carrot and daikon radish into thin rounds.
- Remove the stems from the shiitake mushrooms and slice them.
- Trim the ends of the snow peas and set them aside.
- In a medium saucepan, combine the dashi stock, soy sauce, mirin, and sugar, and bring to a gentle simmer over medium heat.
- Add the sliced carrot and daikon radish to the saucepan, and simmer for about 10 minutes until they begin to soften.
- Add the shiitake mushrooms and continue to simmer for an additional 5 minutes.
- Stir in the snow peas and sesame oil, and simmer for another 3-5 minutes until all vegetables are tender but still vibrant.
- Remove from heat and garnish with chopped green onions before serving.
