Ingredients

  • Napa cabbage - 200 grams, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, thinly sliced
  • Daikon radish - 100 grams, julienned
  • Broccoli - 100 grams, cut into florets
  • Tofu - 200 grams, firm, cubed
  • Green onions - 2, chopped
  • Vegetable broth - 500 milliliters
  • Soy sauce - 2 tablespoons
  • Miso paste - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Chili flakes - 1/2 teaspoon (optional)
  • Cooked rice - to serve

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Pour in the vegetable broth and bring to a gentle simmer.
  3. Stir in the soy sauce and miso paste, mixing well to dissolve the miso.
  4. Add the chopped napa cabbage, sliced shiitake mushrooms, carrot, daikon radish, and broccoli to the pot. Simmer for 10-15 minutes until the vegetables are tender.
  5. Gently add the cubed tofu to the pot and simmer for an additional 5 minutes.
  6. If using, sprinkle in the chili flakes for some heat and adjust seasoning to taste.
  7. Serve the Yasai Nabe hot, garnished with chopped green onions, alongside cooked rice.
