- Napa cabbage - 200 grams, chopped
- Shiitake mushrooms - 100 grams, sliced
- Carrot - 1 medium, thinly sliced
- Daikon radish - 100 grams, julienned
- Broccoli - 100 grams, cut into florets
- Tofu - 200 grams, firm, cubed
- Green onions - 2, chopped
- Vegetable broth - 500 milliliters
- Soy sauce - 2 tablespoons
- Miso paste - 1 tablespoon
- Sesame oil - 1 teaspoon
- Fresh ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Chili flakes - 1/2 teaspoon (optional)
- Cooked rice - to serve
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Pour in the vegetable broth and bring to a gentle simmer.
- Stir in the soy sauce and miso paste, mixing well to dissolve the miso.
- Add the chopped napa cabbage, sliced shiitake mushrooms, carrot, daikon radish, and broccoli to the pot. Simmer for 10-15 minutes until the vegetables are tender.
- Gently add the cubed tofu to the pot and simmer for an additional 5 minutes.
- If using, sprinkle in the chili flakes for some heat and adjust seasoning to taste.
- Serve the Yasai Nabe hot, garnished with chopped green onions, alongside cooked rice.
