Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 300 milliliters
  • Carrot - 1 medium, diced
  • Shiitake mushrooms - 100 grams, sliced
  • Bell pepper - 1 medium, diced
  • Green peas - 50 grams (fresh or frozen)
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Chopped scallions - 2 tablespoons (for garnish)

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the rinsed rice and water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  4. While the rice is cooking, heat sesame oil in a large skillet over medium heat.
  5. Add the diced carrot and sauté for about 3 minutes until slightly softened.
  6. Add the sliced shiitake mushrooms and bell pepper to the skillet, cooking for another 5 minutes until the vegetables are tender.
  7. Stir in the green peas, soy sauce, and mirin, cooking for an additional 2 minutes to combine flavors.
  8. Once the rice is cooked, fluff it with a fork and then gently fold in the sautéed vegetables.
  9. Season with salt to taste and serve warm, garnished with chopped scallions.
