- Japanese short-grain rice - 150 grams
- Water - 300 milliliters
- Carrot - 1 medium, diced
- Shiitake mushrooms - 100 grams, sliced
- Bell pepper - 1 medium, diced
- Green peas - 50 grams (fresh or frozen)
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Chopped scallions - 2 tablespoons (for garnish)
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium pot, combine the rinsed rice and water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- While the rice is cooking, heat sesame oil in a large skillet over medium heat.
- Add the diced carrot and sauté for about 3 minutes until slightly softened.
- Add the sliced shiitake mushrooms and bell pepper to the skillet, cooking for another 5 minutes until the vegetables are tender.
- Stir in the green peas, soy sauce, and mirin, cooking for an additional 2 minutes to combine flavors.
- Once the rice is cooked, fluff it with a fork and then gently fold in the sautéed vegetables.
- Season with salt to taste and serve warm, garnished with chopped scallions.
