- Broccoli florets - 100 grams
- Shiitake mushrooms - 100 grams, sliced
- Soy sauce - 30 ml
- Mirin - 15 ml
- Sesame oil - 10 ml
- Vegetable broth - 100 ml
- Garlic - 1 clove, minced
- Ginger - 1 tsp, grated
- Spring onions - 2, chopped for garnish
- Sesame seeds - 1 tsp for garnish
Steps
- Prepare the rice according to package instructions and keep warm.
- Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
- Add the julienned carrot, sliced zucchini, bell pepper, broccoli florets, and shiitake mushrooms to the skillet, stirring well. Cook for about 5-7 minutes until the vegetables are tender but still crisp.
- Pour in the vegetable broth, soy sauce, and mirin, stirring to combine. Cook for an additional 3-4 minutes until the sauce reduces slightly.
- Divide the cooked rice between two bowls, then generously top with the sautéed vegetable mixture.
- Garnish with chopped spring onions and sesame seeds before serving.
