  • Bell pepper (red or yellow) - 1, sliced
  • Broccoli florets - 100 grams
  • Shiitake mushrooms - 100 grams, sliced
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sesame oil - 10 ml
  • Vegetable broth - 100 ml
  • Garlic - 1 clove, minced
  • Ginger - 1 tsp, grated
  • Spring onions - 2, chopped for garnish
  • Sesame seeds - 1 tsp for garnish

Steps

  1. Prepare the rice according to package instructions and keep warm.
  2. Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  3. Add the julienned carrot, sliced zucchini, bell pepper, broccoli florets, and shiitake mushrooms to the skillet, stirring well. Cook for about 5-7 minutes until the vegetables are tender but still crisp.
  4. Pour in the vegetable broth, soy sauce, and mirin, stirring to combine. Cook for an additional 3-4 minutes until the sauce reduces slightly.
  5. Divide the cooked rice between two bowls, then generously top with the sautéed vegetable mixture.
  6. Garnish with chopped spring onions and sesame seeds before serving.
