Ingredients

  • Carrot - 1 medium, sliced
  • Potato - 1 medium, diced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1, chopped
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Vegetable oil - 2 tablespoons
  • Japanese curry powder - 2 tablespoons
  • Coconut milk - 200 ml
  • Vegetable broth - 200 ml
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Cooked rice - 200 grams, for serving

Steps

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the diced onion, minced garlic, and ginger, and sauté until the onion is translucent.
  3. Add the sliced carrot, diced potato, and chopped bell pepper. Cook for about 5 minutes, stirring occasionally.
  4. Stir in the zucchini and continue to cook for another 3 minutes.
  5. Sprinkle the Japanese curry powder over the vegetables and mix well to coat.
  6. Pour in the vegetable broth and coconut milk, bringing the mixture to a simmer.
  7. Reduce the heat to low and let the curry simmer for about 15 minutes, or until the vegetables are tender.
  8. Stir in the soy sauce, and season with salt and pepper to taste.
  9. Serve the yasai curry over cooked rice.
