Ingredients
- Edamame - 100 grams, shelled
- Carrot - 1 medium, grated
- Shiitake mushrooms - 50 grams, finely chopped
- Green onion - 2, finely sliced
- Panko breadcrumbs - 50 grams
- Soy sauce - 1 tablespoon
- Miso paste - 1 tablespoon
- Sesame oil - 1 teaspoon
- Egg - 1, beaten
- Burger buns - 2, preferably soft and fluffy
- Lettuce leaves - 2, for garnish
- Tomato - 1 medium, sliced
- Avocado - 1, sliced
- Miso mayo - 2 tablespoons (mix mayonnaise with 1 teaspoon miso paste)
Steps
- In a mixing bowl, combine the shelled edamame, grated carrot, chopped shiitake mushrooms, green onion, panko breadcrumbs, soy sauce, miso paste, sesame oil, and beaten egg.
- Mix all the ingredients until well combined, then form the mixture into two equal-sized patties.
- Heat a non-stick skillet over medium heat and add a drizzle of oil. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and crispy.
- While the patties are cooking, prepare the miso mayo by mixing mayonnaise with miso paste in a small bowl until smooth.
- Toast the burger buns lightly in the skillet if desired.
- Assemble the burgers by spreading miso mayo on the bottom half of each bun, placing a lettuce leaf, the cooked patty, sliced tomato, and avocado on top.
- Finish with the top half of the bun, and serve immediately.
